Prep Time: 15 minutes
Cook Time: 2 1/2 to 3 hours
Total Time: Up to 3 hours, 15 minutes
Yield: 1 bread

Ingredients:
- 1 Tbsp yeast
- 1/4 cup warm water
- 1 cup warm liquid (milk, buttermilk, water, whey)
- 1/2 cup rolled oats
- 1 1/2 tsp salt
- 2 Tbsp oil
- 2 Tbsp honey
- 1 egg
- 1/4 cup wheat germ (this time I substituted chia seeds)
- 2 cups whole wheat flour
- 3/4 cup all-purpose flour
Steps:
- Grease your coffee can. You can also use a deep metal or glass bowl.
- Dissolve yeast in water.
- Combine with the warm liquid of your choice, oats, salt, oil, honey and wheat germ.
- Add the flour.
- Knead until smooth and elastic. This will take about 5 minutes. You may have to add more flour on a humid day.
- Turn the dough into the coffee can or bowl. Cover loosely with foil. Make sure the foil is loose.
- Put 1/2 cup of water and a trivet in your slow cooker. You can use crumpled up pieces of foil if you don't have a trivet.
- Cover the slow cooker. Bake for 2 1/2 to 3 hours. The top of the bread may not brown.
- My slow cooker is too shallow to cover the coffee can. I covered the cooker with a towel, and added more water to replace what evaporated through the cooking process at several intervals.
- Remove from can and cool on a wire rack.

It's denser. It's a very satisfying bread.
