This was a delicious meal, and very economical. You probably already have the ingredients. I doubled the recipe so I could have extra for during the week.

Ingredients:
- 2 Tbsp all-purpose flour
- 1 tsp onion powder
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- salt and pepper
- 1 Tbsp oil
- 2 lb chicken pieces
- 2 onions, sliced
- 2 cloves garlic, chopped fine
- 1 cup chicken broth, warmed
- 2 springs thyme (I used dried)
- 1 bay leaf
Steps:
- Heat oven to 350 degrees F.
- Combine the flour, onion powder, paprika, cayenne pepper, salt and pepper in a plastic bag. Combine well.
- Pat chicken dry and put in the bag. Cover pieces thoroughly. Shake off excess.
- Heat the oil in a large, ovenproof skillet over medium-high heat. Add chicken to hot oil and sear until brown, about 1-2 minutes per side. Remove the chicken to a plate.
- Add onions to the remaining oil and reduce heat to medium. Season the onions to taste with the salt and pepper. Cook 5-7 minutes, stirring occasionally, until golden brown. Add the garlic and cook about a minute, or until fragrant.
- Put the flour mixture that remained in the bag into the skillet with the onions. Stir to coat. Add the warmed chicken stock and increase heat to medium-high.
- Bring to a boil. Reduce heat until the mixture is simmering.
- Add the chicken and any juices to the onions.
- Add the thyme and bay leaf.
- Transfer the skillet to the oven and cook until the juices run clear, about 30 minutes.
