Bronze Post Medal for All Time! 140 Posts This is a great recipe that gives you a lot of the food groups in one recipe. This zucchini bread is great for breakfast, snack, or dessert, and a lunch box favorite. Large amounts can be baked and frozen for later, here's how!
Prep Time: 20 min.
Cook Time: 70 min.
Total Time: 1 hr. 30 min.
Yield: 3 - 1 lb. loaf pans
Ingredients:
- 3 cups all purpose flour
- 3 eggs
- 2 cups sugar
- 1 cup veg. oil
- 2 cups grated zucchini
- 1 cup raisins
- 1 tsp.cinnamon
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/2 cup sour cream
Steps:
- Grate zucchini and set aside.
- In a large bowl or mixing bowl, add all dry ingredients together. Mix well.
- Add oil, eggs, zucchini, raisins, and sour cream. Mix well.
- Preheat oven on 350 degrees F. Bake for 1 hr. 10 min.
- When done insert tooth pick in center. If it comes out crumb free, its done.
