Total Time: 15 minutes
Yield: 4 servings
Ingredients:
- 16 oz. roll polenta (my store has this in the deli department)
- 1 lb ground beef (I prefer 97% lean)
- 1 can black beans, drained
- 12 oz jar salsa
Steps:
- Brown ground beef in saucepan. I find that adding a couple tablespoons of water to the raw meat makes it break up more easily. Drain.
- Stir in black beans and salsa. Cook until heated through.
- Slice polenta into 8 "rounds". Spray sauce pan with a little cooking spray and heat polenta for a few minutes on each side. Loosen frequently as it likes to stick. The originally recipe called for the polenta to be heated first then placed on a plate in the oven on warm so the same pan could be used for the meat. Instead of heating up the oven for this, we just cook the polenta in a separate pan while the meat mixture is heating.
- Spoon meat and beans over the polenta rounds. Serve with a vegetable for a tasty, nutritious, well rounded meal.
