That looks more like Zucchini than eggplant, both in color and shape. Eggplant is more egg-shaped and generally purple (although the white variety is good as well) while zucchini is generally thinner and more elongated. The plants are similar, and I'm sure either would taste amazing prepared this way.
This variety is usually called Asian or Japanese eggplant. They are long and skinny and have a sweeter and more delicate taste than the European variety that is common in the U.S.
You could find this at an Asian supermarket or maybe even Whole Foods. Or you could use the kind you are familiar with, it should be delicious.
