Diamond Post Medal for All Time! 1,298 Posts I had just enough left over spaghetti sauce until I found out we were having an extra guest. No problem, I was able to improvise on the spot with fresh tomatoes and onions.
Prep Time: 10 minutes
Cook Time: 45-50 minutes
Total Time: 1 hour
Yield: 4-6 people
Ingredients:
- 4 tomatoes
- 1 onions
- 1 lb ground beef
- 1/2 leftover spaghetti sauce
- dash salt and pepper
Steps:
- Wash and dice tomatoes and onions.
- Over medium heat for about 20-30 minutes, cook down tomatoes.
- Meanwhile tomatoes are cooking, sauté onions until golden brown.
- Add some sauté onions into tomato pot.
- Keep some sauté onions in the pan, add your ground beef and cook the beef until done.
- Cook the beef until done.
- When your tomatoes look to be saucy consistency, you can pour in your leftover jarred tomato sauce. Stir to combine.
- Pour sauce mixture over ground beef. Allow the flavors to get all mixed until sauce boils, then simmer for 5 minutes. You can toss with your choice of pasta.

Sure sounds like a good way to use left over sauce (which I always seem to have) and still have a nice entree.
