I make a simple spanish rice:
3/4 cup white rice
1/2 cup chopped onion
1 chopped green pepper
1 tbsp tomato paste
Worcestershire sauce
Chicken boullion
Chili powder
Dried parsley
Cook onions and peppers in a saucepan with a little oil until tender. Stir in uncooked rice, 1 and 1/2 cups water, tomato paste, a dash of Worcestershire sauce and chicken bouillion (I use about half a cube). Season with chili powder to taste, add a pinch of parsley. Bring to a boil then cover and reduce heat to low, cooking ten minutes or until rice is tender.
Saute med size chopped onion in olive oil until translucent, add 1 cup white rice stirring until rice is fully covered and translucent. Add salt, pepper, garlic powder and chili powder. Mix and add 1 8oz can of tomato sauce and1 1/2 cups water.
Mine is even easier and have been making it forever.1 cup white rice. Saute in one tablespoon of whatever you like, butter, margarine, oil or olive oil. It doesn't really matter Saute for 1-2 minutes add 1 can Rotel original and 1 3/4 cups water. If you want it very spicy try hot Rotel or mild for little a spice. Bring to boil and simmer for 20 min. Perfect every time.
