Gold Post Medal for All Time! 677 Posts You get a lot of protein for the money in this recipe. I did not have frozen peas, so I used the frozen vegetables I did have. This is delicious and healthy. It makes a lot, and freezes well. I made brown rice to go with it.

Cook Time: 25 minutes
Total Time: 1 hour and 20 minutes
Yield: 14 1/2-cup servings
Ingredients:
- 1 lb dried lentils, rinsed
- 3 Tbsp olive oil
- 4 garlic cloves, chopped
- 1 can (28oz) tomatoes, chopped or sauce
- 2 cups broth (I used chicken)
- 1/4 cup chili powder
- 4 Tbsp cumin
- salt and pepper to taste
- 1/2 cup frozen peas (frozen mixed veggies were used here)
Steps:
- Boil a large pot of water. Put the lentils in. Boil for 2 minutes, stirring frequently.
- Turn off the burner, cover the pot and let the lentils sit for an hour.
- Drain and rinse the lentils.
- In the pot used to boil the lentils, sauté the garlic and the onion.
- Add the tomatoes, broth, chili powder, cumin, salt, pepper and peas.
- Add the lentils back. Simmer for 15 minutes.
