This was one that my mom made a lot when I was a kid. I like it because not only does it taste great, but it also travels well for picnics and potlucks.
Ingredients:
- 1 pint cottage cheese
- 1 (3 oz.) pkg. orange gelatin
- 1 (8 oz.) can crushed pineapple, drained
- 1 (regular size) carton Cool Whip
- 1 can apricots, sliced up (reg. size)
- 1/2 cup pecans or nutmeats of your choice
- maraschino cherries, to your taste
Directions:
Sprinkle the dry gelatin over the cottage cheese. Mix well and let stand 30 minutes. Add remaining things with enough cherries to suit taste and color, and put in refrigerator.
