Ingredients:
- 3 apples (you may use any apple you wish)
- 1 cup granulated sugar
- 1 stick unsalted butter, melted
- 1 egg
- 1 1/4 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg (freshly grated is better)
- 1/2 tsp ground allspice (optional)
- 1/2 tsp salt
- 1/2 cup golden raisins (optional)
- 2 Tbsp granulated sugar mixed with 1 tsp ground cinnamon
- confectioners' sugar for dusting
Steps:
- Preheat an oven to 325°F. Line your 8-inch round pan with wax paper or parchment paper and butter it. (I used a 9-inch and it was fine.)
- Core the apples. Do not peel. Slice thinly. In a bowl, whisk together the granulated sugar, butter, and egg. Stir in two-thirds of the apple slices.
- In another bowl, sift together the dry ingredients (flour, baking soda, spices, and salt). Add this mixture to the apple mixture and stir until just blended.
- Pour the batter into the prepared pan. Smooth the top. Press the remaining apple slices into the top, creating a pretty pattern. Sprinkle with the cinnamon sugar.
- Bake until the cake is golden and springs back when you press it with your thumb, about 50 minutes. Transfer the pan to a wire rack and let the cake sit in the pan for 10 minutes. Then turn it out onto the rack and cool completely. Dust with the confectioners' sugar just before serving. If you freeze the cake, put the sugar on after it has thawed out.
