Diamond Post Medal for All Time! 1,298 Posts Cucumbers are a staple in our household. They are very versatile to eat and this is a favorite recipe of mine! This spicy cucumber salad makes the perfect light appetizer, snack or goes well with any rice dish.
Prep Time: 10 minutes
Yield: 1-2 people
Ingredients:
- 1 cucumber
- 1/2 tsp salt
- 1/2 tsp roasted sesame seeds
- 1/2 tsp sesame oil
- 3 green onions
- 1 tsp rice vinegar
- 1 Tbsp Korean red pepper powder
- 1 tsp minced garlic
- 1 tsp sugar
Steps:
- Prep ingredients. Slice cucumbers into your desired size. Mince garlic and chop green onions.
- In a small bowl, add sesame, sugar, sesame oil, and rice vinegar.
- Add your desired spice level, I added 1 tablespoon of Korean red pepper powder (more or less depending on your liking), minced garlic and green onions.
- Mix your seasoning together.
- Pour seasoning over sliced cucumber and mix together. Can be eaten immediately after preparing.
