Bronze Post Medal for All Time! 124 Posts I made some pickled cucumbers that were really tasty! In one batch I peeled the outer layer and in another I didn't. I prefer the peeled ones. Enjoy!

Yield: 1 Cucumber
Ingredients:
- 1 cucumber
- apple cider vinegar
- sliced onion
- 1 tsp mustard seeds
- 1 pinch chia seeds
- 1 in slices of chili (optional)
Steps:
- I sliced a whole cucumber into both chunks and thinner slices.
- I added them to a clean jar and then filled the jar with apple cider vinegar. I added mustard seeds, chia seeds and a few slices of onion. For the spicy ones I added a couple of slices of a red chili pepper.
- I store them in the door of my fridge. These are lovely with cheese and crackers or in a ploughman's lunch. I even had them in a cream cheese deli wrap.

This brine can be used with other vegetables such as peppers and carrots. It can even be used with hard boiled eggs!
