I made this for a party recently and it was very well received. One of my friends has allergies to many things so this is a very simple version. It could be spiced up in so many ways to suit your own tastes.
Ingredients:
- 1 can quartered artichokes
- 1 shallot
- 3-5 cloves garlic
- 1 package frozen spinach (about 2 cups fresh, wilted)
- 1/2 cup mayonnaise
- 1 package Greek yogurt
- 1 cup mozzerella cheese, shredded
- 1/2 cup Parmesan cheese, shredded

I served this dip with cauliflower, broccoli, broccoli romanesco (which I love!) and jicama. These were vegetables that my friend could tolerate, but many more veggies could be used. You could easily serve it with bread or crackers too.
Steps:
- Drain the quartered artichokes in a sink.

- Blend quartered shallots and garlic cloves in a blender or food processor
- Drain thawed frozen spinach by pressing it to remove liquid.

- In a large bowl, mix all the ingredients together.

- Place mixture into buttered baking dishes. Part of the mixture could easily be frozen now and baked for a future party.

- Bake at 350 degrees F or until bubbly and slightly brown at the edges.

Oh my gosh! I am going to have to make this!! I absolutely love love Spinach Artichoke Dip. :)
