Ingredients:
- 1 tsp olive oil
- 2 cloves garlic, minced
- 8 oz bag spinach
- 1 cup quartered artichoke hearts, drained
- 1/4 cup shredded part-skim mozzarella cheese
- 6 large eggs
- 1/2 cup skim milk
- 1/2 tsp black pepper
The original recipe offers mushrooms and or green peppers as additional idea's to add to the mixture too. I may try them next time!
Steps:
- Pre-heat oven to 350 degrees F while you cut up your garlic and wash your spinach.
- Heat your oil in a 12" oven safe skillet. Saute garlic a minute.
- Add garlic and spinach to heated pan and saute for two minutes until spinach wilts.
- Add drained can of artichokes to pan mixture then top with shredded mozzarella.
- Whisk together eggs, milk and pepper together.
- Pour mixture over ingredients in pan.
- Bake in oven for 20 to 25 minutes.
- Remove from oven and let it cool for about 5 minutes in pan. Careful! It's hot! (guess who burned herself..;)
- Enjoy!
Note: Egg whites may be substituted for part or all of the eggs in the recipe to lower cholesterol count.
