I am looking for a recipe for sponge candy. The old fashioned sponge candy. I once had the recipe but have lost it. I would really love to get it again. Does anyone know how it is done? Or is it a lost art?

Old Fashioned Sponge Candy
Combine sugar, syrup, and vinegar in heavy sauce pan. Stir over medium heat until sugar dissolves.
Then cook to 300° F. or crack stage. Remove from heat, stir soda in quickly, mixing up. (it will become frothy) Pour into buttered pan. Cool and break into pieces.

Cook sugar, corn syrup and vinegar to 300 degrees on candy thermometer, stirring often. Remove from heat; add baking soda. Mix well (this foams up-use large pan). Pour into 13x9 inch pan, buttered lightly. DO NOT BUMP PAN OR STIR. Let cool, break into pieces. Melt chocolate almond bark and chocolate chips and dip pieces. Set on waxed paper to dry. (12/16/2005)
