Well, spring is upon us and it has got me thinking about vegetables. That sounds funny, but it's true! Minus a bit of slicing time, this is a very easy and quick side dish to prepare. Add some spices, and you end up with a savory dish that even a table of children will gobble up without a single complaint!
Total Time: About 20 minutes, prep included
Yield: About 6 generous sides
Ingredients:
- 8 baby zucchini, or 5 cups sliced zucchini
- 4 carrots, or 2 cups sliced
- 3 garlic cloves, minced
- 3-4 Tbsp olive oil
- 2 tsp basil
- 1 tsp salt
Steps:
- Peel and slice your zucchini. I did this by hand, they are roughly 1/4 inch thick. Peel and slice your carrots.
I used a hand held mandolin slicer for the carrots. I suggest doing this for carrots, as it will give you thinner slices that will cook quicker. 
- Pour 3-4 tablespoons olive oil in the bottom of your large pan.

- Add your sliced veggies.

- Add your minced garlic, basil and salt.

- Stir well.

- Cook over medium to high heat for about 9 minutes, stirring constantly.
- Enjoy! :)

This definitely blows frozen vegetables out of the water!

I'd suggest not peeling the zucchini.....no need to. And peel probably contains vitamins.
