Diamond Post Medal for All Time! 1,246 Posts My friends and I had chocolate covered jelly beans for the first time recently and we really loved them. To keep the fun alive, I made this jelly bean studded fudge out of white chocolate, then decorated the top with flowers made of more jelly beans. It's truly a jelly bean lover's delight, and perfect for the springtime.
Jelly Belly sells huge bags of their irregular jelly beans for half price. I actually found a big bag for 99 cents at the dollar store! For this recipe, it doesn't matter what the beans inside the fudge look like, so this ended up being a super cheap batch of fudge with at least 50 servings.
Total Time: 1 hour plus 4 hours to set
Yield: 50 pieces of fudge

Ingredients:
- 3 ounces marshmallows
- 1 Tbsp water
- 5 ounces white chocolate chunks
- 1 cup sugar
- 1/3 cup heavy cream
- 1/3 cup unsalted butter
- pinch of salt
- 2 cups jelly beans
- 1 Tbsp green sugar sprinkles
- 1/2 cup jelly beans
Steps:
- Line a 9 inch springform pan with foil and grease the sides bottom.
- Wrap foil around an empty tin can, grease the bottom 2 inches, then place it in the middle of the pan.
- In a large pot over low heat, melt the marshmallows with 1 tablespoon of water.
- Add white chocolate chunks and stir until marshmallows are almost all melted. Remove from heat.
- In a medium saucepan, put sugar, heavy cream, unsalted butter and salt.
- Bring to a boil over medium-high heat, stirring frequently. Once it is boiling, continue to boil for 4 minutes, stirring constantly.
- Pour over marshmallow mixture.
- Beat this mixture with an electric mixer for about a minute until everything is blended and smooth.
- Sort through your jelly beans to find colours for your flower decorations for the top of the fudge. You'll need about 1/2 cup.
- Find 1 1/2 cups of grass and earth toned jelly beans for inside the fudge. Pour in and mix well.
- Pour into prepared pan.
- Sprinkle top with green sugar.
- To make a flower, poke a jelly bean into the fudge, then lay 7 jelly beans around it to make petals.
- Make more flowers, then pop in the fridge for at least 4 hours.
- Gently twist the can and it will pop out. Release the latch on the springform pan and remove the fudge. The foil will easily peel off.
- Fill the middle with 1/2 cup of jelly beans.
- Cut and serve.
