A recipe I've learned from my second mom (my mom's sister). We used to cook this from breakfast to dinner. My siblings and I have different versions, but this one is our favorite.
Ingredients:
- 250 g squash
- 3-4 cloves garlic
- 1 Tbsp vegetable oil
- pinch of salt and pepper
- 1/4 cup water
- 30 g oyster sauce
- 2 eggs, beaten
Steps:
- Chop squash into mini cubes.
- Saute garlic in 1 Tbsp. vegetable oil until slightly brown.
- Add the squash. Sprinkle pinch of salt and pepper. Stir until parts are slightly brown.
- Pour water and cook over medium heat for one minute.
- Add oyster sauce and simmer for another one minute.
- Add beaten eggs.
- Stir mixture until sauce is completely reduced and absorbed by the squash.
- Top with sunny side up egg only if you like. Best served hot.
