Diamond Post Medal for All Time! 1,298 Posts A quick meal prepared with frozen vegetables and noodles. I served mine with leftover chicken.
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Yield: 4 people
Ingredients:
- 1 package soba noodles
- 4 eggs
- 1 cup corn
- 1 cup peas
- 3/4 cup spinach
- 4 Tbsp soy sauce
- 3 Tbsp coconut oil
- left over chicken
Steps:
- Prep your soba noodles. Follow instructions on the packaging for boil time. About 7-8 minutes.
- In a large pan, add oil and quickly stir fry soba noodles with a splash of soy sauce for a few minutes.
- Add eggs (your desired amount) and scramble all together.
- Add your choice of vegetables. I used frozen corn, peas and spinach. Ready to eat alone or serve with any left over meat you have - I had leftover chicken with I re-heated in the toaster oven.

I've never really thought to stir fry soba-- I'll give this a go!
