Sprinkle some dried thyme into the bag, and store in a cool dry place. I just got this bag for 99 cents, and want to use every single potato!

I'm lost on this one. Are you doing this because the thyme helps preserve the potatoes or does the thyme release flavoring agents that are taken up by the potatoes?
Perhaps if you take them out of the plastic bag it would help a great deal to prevent spoilage.
