How do you keep parsley fresh for at least 3 weeks?

Here's what I do so that it stays fresh and am able to have it on hand whenever I need it.
I cut the entire bunch into small pieces with my kitchen scissors, put into a large bowl & sprinkle with coarse salt, shake up the mix, and put into a clean covered mason jar in the fridge.
This will keep for about a month and can be used up in many different ways in recipes or as plate garnish.
