If they are the kind with NO MEAT or use cured, salt pork, you can keep them in the fridge for 3-4 days before cooking, but you risk the cabbage getting brown and slimey--which means you will need to toss those. After cooking you can keep another 2-3 days in the fridge, but then freeze.
If they have any UNCURED meat(s), I would not store in the fridge AT ALL or at longest, make at night, bake in the morning. Cooked meat products can keep in the fridge 2-3 days before freezing (unless it smells bad, then toss).
Safety first with all food products! I have had food poisoning too many times so I am very cautious about things like this.

Two days would be all I would do.
If it were me I would cook them within 3 days. I know people say you can keep them up to 5 days before you cook them but they seem to smell a bit funny to me.
Just a couple days especially since they are sour as is already.
