I make a dessert that uses canned Strawberry Pie Filling. Does anyone know how to make Strawberry Pie Filling instead of buying the canned stuff. It's so expensive!
This is the recipe I have used for years. The filling sets somewhat like jello and is not the soft gel type you get in a can, but never the less is wonderful!
Fresh Strawberry Pie
1-9" baked pie shell
1 qt fresh strawberries (sliced or left whole)
1 1/2 cups water
1 cup sugar
Dash of salt
1/8 cup (or 1 1/2 tbls) cornstarch
1 3oz pkg of strawberry jello
Whipped cream or topping
Bring water (save 1/4 cup to mix with cornstarch), sugar and salt to boil, add cornstarch water to boiling mixture. Stir in jello, cook until clear. Cool until it thickens before pouring over berries. Place strawberries in cooled, baked pie shell. Pour cooled gel over berries and refridgerate pie for several hours before serving. Serve with whipped topping, garnish with extra berries if desired.
What I do is purchase in the fruit section at your grocery store, a bag of strawberry gel like filling, and I cut up strawberries and mix and pour into a baked and cooled pie crust. Top with whipped cream or cool whip, ummmmm, those of you who know of the famous Big Boy restaurants strawberry pie, this is how they do it...
Everybody loves my fresh strawberry pie and it's really simple. It tastes very fresh and delicious. Here it is:
FRESH STRAWBERRY PIE:
2 Cups strawberries, mashed
3 Tbsp cornstarch
1 Cup sugar
2 Cups whole strawberries
In a saucepan, mix sugar and cornstarch. Add mashed strawberries and cook slowly for about 10 min. until thickened. Cool slightly.
Add whole strawberries. Pour into baked 9" pie shell. Chill before serving.
