Diamond Post Medal for All Time! 1,298 Posts Bitter melon has amazing health benefits. This is one way I like to eat it without it being too bitter, because it is balanced with stuffed turkey and shrimp. Very healthy soup and goes great with rice!

Total Time: 1 hour
Yield: 6 bowls
Ingredients:
- 1 package ground turkey
- 6 bitter melon
- 1 lb shrimp
- 10 mushroom
- 1 garlic bulb
- 3 Tbsp fish sauce
- 1 tsp sesame sauce
- 1/2 tsp black pepper
- 1 Tbsp sugar
- 1.5 tsp salt
- 2 tsp vegetable oil
- 1 stem green onion
- 1 white onion
- 1.5 gal water
Steps:
- Open ground turkey package and put into a large bowl. Add sesame oil, dash of salt and pepper. Mix quickly and set aside.
- Wash shrimp and peel the shell and mince to a paste. Sprinkle dash of salt and pepper.
- Wash green onions and dice. Then combine both and mix into a small bowl and set aside.
- Clean mushrooms and dice finely. Also dice onions finely and side aside.
- Wash bitter melon. Cut the bitter melon in the middle but all the way deep to the other side and using a spoon clean the inside (scoop out the seeds).
- Thinly slice garlic. Using a small sauce pan, add vegetable oil on medium heat. Fry the garlic until golden brown for about 5 minutes.
- Now go back to the big bowl that you set aside (with the turkey) and incorporate the small bowl of minced shrimp together. Add the finely diced mushrooms and white onion that you sliced earlier together. Combine and mix well.
- Then it is time to stuff the bitter melon with the mixture.
- In a large pot, add water on medium heat until boiled. Add the golden brown garlic earlier cooked and add all the bitter melon into the pot. Add fish sauce and cover the lid to cook for 30 minutes.
