Stuffed Zucchini

Stuffed ZucchiniThis is a favorite of mine that my Mom used to make.

Prep Time: 30 minutes

Cook Time: 45 minutes

Total Time: 1 1/2 hours

Ingredients:

Steps:

  1. Wash zucchini and cut off ends. Cut in half, then lengthwise.
  2. Par boil in 1/2 cups water, a teaspoon of oil, and garlic salt or powder for 10 minutes. Toward the end of the cooking time, add salt. Let cool.
  3. Scoop out the inside of the zucchini and drain liquid.
  4. Place in a bowl and chop with a hand chopper. Add crushed crackers, beaten egg, onions, bell peppers, cheese, and salt. Mix together.
  5. Scoop back into zucchini "shells." Fry stuffing side down in a greased frying pan until nicely browned.
  6. Place in a casserole dish stuffing side up and bake in a 350 degree F oven for 30 minutes.
