This is a favorite of mine that my Mom used to make.
Prep Time: 30 minutes
Cook Time: 45 minutes
Total Time: 1 1/2 hours
Ingredients:
- 3 medium zucchini
- garlic salt or powder
- oil
- 1 tsp salt
- 1 1/2 cup crushed soda crackers
- 1/4 cup grated cheese
- 2 Tbsp chopped onion
- 2 Tbsp chopped bell pepper
- l/2 tsp salt
- 1 egg, beaten
Steps:
- Wash zucchini and cut off ends. Cut in half, then lengthwise.
- Par boil in 1/2 cups water, a teaspoon of oil, and garlic salt or powder for 10 minutes. Toward the end of the cooking time, add salt. Let cool.
- Scoop out the inside of the zucchini and drain liquid.
- Place in a bowl and chop with a hand chopper. Add crushed crackers, beaten egg, onions, bell peppers, cheese, and salt. Mix together.
- Scoop back into zucchini "shells." Fry stuffing side down in a greased frying pan until nicely browned.
- Place in a casserole dish stuffing side up and bake in a 350 degree F oven for 30 minutes.
