Many years ago someone brought cookies to my son's preschool. The cookies were cut-out cookies. They were "raised" and crisp on the outside, but soft in the middle. They looked similar to animal crackers. I have been searching for years for a recipe but so far no luck. Anyone have a recipe for this type of cookie?

It might depend on how thick you make your cookies as to how they turn out (crispy on edges and soft inside). I always like this recipe but I would say they are more crispy than soft. These have to have several hours in the frig to roll out nicely. Otherwise, just roll into balls and flatten.
Sugar Cookies
Cream together:
I cup sugar
1 cup butter
Add:
2 cups all purpose flour
1/2 tsp. cream tartar
1/8 tsp. salt
1/2 tsp soda
1 tsp. vanilla
Bake 350 to 375, till done approx. 8 min.
