Red Jello on White Plate

Ingredients:

  • 1 frozen juice, unsweetened concentrate
The flavors you can use are diverse, but it's imperative you pick one without pulp.

Directions:

Heat on medium in pan without water. Add one package of Slim Set* (or any sugar-free pectin). Dissolve and pour into clean glass jars. You can let them cool slightly and cap, or use the old fashioned way and wax cover them. *SLIM SET is no longer being manufactured, so you may not be able to find it. Substitute SURE-JELL No Sugar or Reduced Sugar Pectin instead.

Flavor Ideas:

  • apple
  • apple-pear
  • cran-apple
  • cranberry
  • pear
  • white grape
  • grape
If you want to experiment and combine two flavors, make sure you either halve each juice or double each pectin. There are literally thousands of recipes on www.cooks.com if you want more.

Source: I got this from a Mother Earth News in 1978. Been making it ever since. It's a perfect gift for diabetics or anyone who just wants to cut down on sugar.
