Ingredients:
- 1 cup flour
- 1 cup oatmeal
- 3/4 cup brown sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 egg, beaten
- 3/4 cup milk
- 1/3 cup oil
- 1/2 cup chopped nuts ($.85)
Steps:
- Preheat oven to 350 degrees F.
- Combine dry ingredients in bowl.
- Combine liquid ingredients; add all at once to dry ingredients. Stir just until moist. Batter will be lumpy. Do not over mix.
- Fold in nuts.
- Spoon into 12 greased muffin cups. Top with 2 T. sugar and 1/4 t. cinnamon. Bake at 350 F for 18-20 minutes.
