Super Moist Citrus Pound Cake

Total Time: 50 minutes

Yield: 8 slices

Ingredients:

• 1 1/2 cup cooked oatmeal
• 1 1/2 cup flour
• 1 tsp baking soda
• 1 tsp baking powder
• pinch of salt
• 1/2 cup lemon and orange juice, mixed
• 1 Tbsp citrus zest
• 2 eggs
• 1/4 cup oil
• 1 cup sugar
• Glaze
• 1 cup powered sugar
• 1 Tbsp citrus zest
• 1/4 cup lemon and orange juice, mixed

Steps:

1. Preheat oven to 350 F. Stir together flour, baking soda, baking powder and pinch of salt.

 
2. Zest and juice your lemon and orange if you haven't already.

 

 
3. Set aside a quarter cup of juice and tablespoon of the zest.

4. In your bowl of leftover oatmeal, add sugar, eggs, citrus juice, zest and oil. Mix well.

 
5. Add flour mixture to wet mixture and blend well.

 
6. Pour into greased loaf pan. Bake for 45 minutes or until it tests done.

 

 
7. While the cake is baking, make the glaze by whisking together the powdered sugar, tablespoon of zest and 1/4 cup citrus juice.

8. When the cake has cooled, drizzle glaze on top.
