Ingredients
- 3 cups mashed sweet potatoes
- 1 cup sugar
- 2 eggs, slightly beaten
- 1/4 cup margarine, melted
- 1 tsp. vanilla
- 1 cup coconut
Topping:
- 1/2 cup flour
- 1/2 stick margarine (room temperature)
- 1 cup brown sugar
- 1 cup pecans
Directions
Mix together all ingredients and pour mixture into greased or buttered 2 qt. casserole dish.
Mix together topping ingredients and sprinkle over top of potato mixture. Bake 1 hour at 350 degrees F.
