Sweet Potato Pudding

All ingredients do not have to be exact. Very easy, and can be made in different time slots when cooking.

Ingredients:

  • 2 or 3 large sweet potatoes (about 4 cups full)

  • 4 Tbsp. margarine or butter, melted
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 2 eggs
  • 1 cup sugar or Splenda (I use Splenda because I'm diabetic). If using sugar add 2 Tbsp. corn starch.
  • 1 Tbsp. corn starch
  • 1 cup buttermilk (or 1 cup sweet milk with 1 tsp. vinegar). If buttermilk is too sour add 1/2 tsp. soda.

Directions:

Cook sweet potatoes until tender when pierced by a fork, about 1 hour. Pour into sink and drain immediately after cooking. Allow to cool enough to peel by hand.

Place peeled potatoes, butter, cinnamon, baking powder, eggs, corn starch, and buttermilk into bowl and mix with electric mixer until well blended.

Grease or spray with Pam a 2 quart dish. Pour mixture into bowl and bake at 350 degrees F for 30 minutes or until set.

I sometimes add additional spices, nutmeg, allspice, or cloves with the cinnamon, or additional cinnamon. I am a cinnamon lover.
