Sweet Potato-Squash Barbecue

Sweet potato and squash are usually added to meat as extender to patties in home kitchens. Now I'm using it to make an alternative for meat. I have some egg yolks that which are not used in making my Swiss meringue. This is perfect for my recipe today which I call squash potato barbecue.

I have some egg yolks that which are not used in making my Swiss meringue. This is perfect for my recipe today which I call squash potato barbecue.

I made an experiment on this so I could share something useful to those in very tight budget, especially those who are really struggling, like the poorest residents in this place.

Their main problem is how to prepare meals for a family of six in a day that costs only less than $3. This is sad but this is the reality in poor communities in this country that belongs to the third world.

Ingredients:

  • 5 medium sized sweet potatoes chopped
  • 4 egg yolks
  • 50 g squash peeled and chopped
  • 1 bouillon cube (any flavor)
  • 1 tsp salt
  • 2 cups water
  • 4 Tbsp corn starch / flour
  • 1 tsp barbecue powdered mix
  • 2 Tbsp soy sauce
  • 2 Tbsp vinegar
  • 3 Tbsp brown sugar
  • 4 Tbsp warm water
  • pinch of pepper

Steps:

  1. Place chopped potatoes and squash in a pot then add water, bouillon and salt. Place over medium heat and bring into boil. Stir occasionally while cooking until tender.
  2. A pot with chopped sweet potatoes and squash.
     
  3. Drain and add into the bowl of egg yolks.
  4. The cooked squash and sweet potato.

  5. Mash with fork and mix well.
  6. Mashing the sweet potatoes and squash together.
     
  7. Add 3 Tbsp. of cornstarch then mix very well until combined.
  8. Mixing the squash and potatoes with flour.
     
  9. Scoop a spoonful of this mixture and fry until golden brown.
  10. Frying the patties in oil.
     
  11. Meanwhile, mix soy sauce, vinegar, powdered barbecue mix, 1 Tbsp. cornstarch and sugar. Stir to combine.
  12. Adding ingredients to the barbecue sauce.

  13. Add hot water and continue stirring until powdered ingredients are dissolved.
  14. Cook over low heat while stirring constantly until it becomes very thick.
  15. Mixing up the barbecue sauce.
     
  16. Transfer in a sauce bowl.
  17. A spoon with barbecue sauce.
     
  18. Dip each fried potato-squash in barbecue sauce and serve.
  19. A plate of sweet potato squash barbeque.
