This is an easy to make tangy Indian chutney.
Ingredients:
- 1/2 cup tamarind
- 1/4 cup jaggery (or brown sugar)
- 1 tsp black rock salt
- 1 tsp dry ginger powder
- 1/4 tsp black pepper powder
- 1/4 tsp chilly powder
- 1 tsp dry mango powder
- salt to taste
Steps:
- Soak the tamarind in water and leave it for a few hours. Then mash the pulp well and strain out.
- Add some water to the tamarind pulp until it comes down to a pouring consistency.
- Mix in the rest of the ingredients and bring to a boil. Simmer until it thickens.
- Cool and serve (or store in a refrigerator for a few days).
