Diamond Post Medal for All Time! 1,246 Posts I am always trying to think of new ways to use up leftovers from Thanksgiving and Christmas dinners. The first round of heating up leftovers is always exciting but it seems like there is more moaning and groaning from round three and on. This Monte Cristo sandwich something I started this year. All the leftovers are packed between a couple slices of bread, battered, fried and dusted with powdered sugar. It is so good, we are all looking forward to my Monte Christmas sandwich around the corner!
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Yield: 2 sandwiches that can easily serve 4
Ingredients:
- 4 slices sturdy sandwich bread
- cranberry sauce
- mustard
- mayonnaise
- mashed potatoes
- turkey
- cheese
- yams
- stuffing
- 1 egg
- 1 cup water
- 1/2 tsp salt
- 1 tsp sugar
- 1 cup flour
- 1 Tbsp baking powder
- oil for frying
- 1 tsp powdered sugar
Steps:
- Start by spreading cranberry sauce on one side, and mustard and mayonnaise on the other.
- On the cranberry sauce, build upwards by adding a thin layer of mashed potatoes, turkey, then cover in cheese. On the mustard and mayonnaise, add yams, then stuffing. Press stuffing down so it locks in.
- Flip the stuffing side down onto the other half of the sandwich and press down firmly with your hand to really keep the sandwich together.
- Place egg in a wide bowl, add water and beat together. Beat in salt, sugar, flour, and baking powder until very smooth.
- Place sandwich in batter and cover all the sides.
- Very carefully place battered sandwich in hot oil and fry until golden.
- Flip sandwich over. Press to sides of pan so all the batter is completely crisp.
- Remove sandwich from pan and place on a paper towel. Repeat steps to make another sandwich.
- Allow to cool, then slice diagonally.
- Stack one on the other, dust with powdered sugar and serve with a side of cranberry sauce.

This looks fantastic and probably tastes even better! It's the perfect solution for the "Round 3 and above" leftovers from the massive Thanksgiving feast and I for one am grateful for this post....perfect for keeping the family from bitching about "having turkey...AGAIN??" lol
