If your deviled eggs filling come out too runny, try adding a little instant mashed potatoes straight from the package. It doesn't affect the taste, and it firms them up nicely.

I just want to post that this works! It saved my deviled eggs! So grateful as these are for a church coffee hour on Easter that I promised to bring food to. I wasn't sure what to do as it was so runny it wouldn't stay in the egg white cups. It took about 1/2 cup of the instant mashed potatoes to thicken my runny filling that was for 20 eggs. I am not sure why it came out so runny, but might be due to using pickle relish without draining it as well as too much mayo.
It occurred to me afterwards that it probably would have worked to add baby cereal like the rice or the mixed grains and it would probably have thickened it without too much taste change. Didn't try that, though, but mentioning it in case anyone else comes to the site and doesn't have the instant potatoes on hand, but may have baby cereal. Good luck!

This just happened to me today. I went to this site to see if there was a tip on fixing the problem. I didnt have either in my cupboard, but I did have almond flour, all that is ground almonds good to counter act on that cholesterol because the fights cholesterol . It came out delicious didnt change the flavor but it made it taste better so I went one thing further I didnt have ground almonds so I chopped up some walnuts and put a dab of sour cream on top and sprinkle that with a few of the nuts I think it mightve tasted better with the almond.
Just wanted to add that I had to try the baby cereal as I did not have any instant potato mix. Worked like a charm! Thank you to whoever posted!
I did not have instant potatoes or baby cereal so I used cream of rice cereal. PLEASE DO NOT USE CREAM OF RICE CEREAL my eggs thickened but were gritty no one ate them and I had to throw all 18 eggs 36 deviled eggs out they were so bad.
I thought I had ruined the deviled eggs I'm taking to Easter brunch tomorrow. Thought I'd have to run to the market to get and boil more eggs, but oh ye of little faith.....mashed potato flakes to the rescue!
HOLY COW THIS WORKS!!! I only had the small packets of Idaho potatoes and used the buttery Homestyle. Couldn't really taste the flavor and I'm sure it will be just fine after sitting overnight before filling the eggs.

Ok in a pinch (when no instant taters or baby cereal near by) and if the runny isn't like soup... I've used flour. Trick is to sprinkle in a pinch at a time, using electric mixer to blend in and tasting often to ensure not losing egg flavor. Again, only use a medium sized pinch and sprinkle it around, blend, taste, until you feel its what you want.

We thickened ours with some panko bread crumbs. They were still a bit crunchy when we first added them (which we actually enjoyed when testing this), but by the time we served the eggs, the crunch has dissipated.
I didn't have either of these and figured out that crushed up saline crackers work too!
I tried this today & added about 1/8-1/16 cup of potato flakes. I think they taste terrible but we will see what my family thinks tomorrow. Im an old cook & should have known better.
