Gold Post Medal for All Time! 677 Posts If you garden, or can get tomatoes cheaply, this is a way to use them and enjoy them when winter comes. I froze my tomatoes to make them easier to skin. If you use fresh tomatoes, plunge them in boiling water and then in ice water to skin them.
Prep Time: 15 minutes
Cook Time: 3 hours
Total Time: 3 hours and 15 minutes
Yield: 2 quarts
Ingredients:
- 8 large tomatoes
- 1 large onion
- 3 cloves garlic
- oil for sautéing
- salt, pepper and Italian seasoning to taste
- 4 fl oz tomato paste
Steps:
- Skin and chop the tomatoes. Set aside.
- Chop the onions and garlic. Cover the bottom of a saucepot with oil. Sauté the onions and garlic.
- Add the tomatoes and seasonings.
- Add the tomato paste.
- Simmer for 3 hours.
