Ingredients:
- 2 carrots
- 1 onion
- 1/4 cup butter or margarine (I used less)
- 1/4 cup flour
- 2 cups chicken broth
- 2 cups milk
- 1 can (6 1/2oz) tuna fish, drained and flaked (cans are smaller than they were when this recipe was written. Mine is 5 ounces)
- 1/2 tsp celery seed
- 1/2 tsp Worcestershire sauce
- 1/4 tsp salt
- 1 cup cheddar cheese, shredded
Steps:
- Shred the carrots.
- Chop the onion.
- Melt the butter over medium heat and sauté the carrots and onions until the onion is transparent.
- Mix in the flour.
- Add the chicken broth and milk.
- Heat and stir constantly, until bubbling and thick.
- Add the tuna, celery seed, Worcestershire sauce and salt. Heat through.
- Add the cheese and stir until melted.

This is a good recipe for winter, for sure. I think I would add cubed potatoes to this soup. They are inexpensive and a good way to give it substance. Served with some bread or oyster crackers, it's a quick and easy weeknight dinner.
