Melt butter in saucepan. Add onion, saute' until tender. Add flour and salt. Stir until smooth. Add the 2 cups milk with 1/2 cup dry milk added. Stir until smooth. Mix noodles, peas, pimento, tuna and 1/2 cup cheese in bowl. Blend in cream sauce. Spoon into 2 qt. casserole; sprinkle with remaining 1/2 cup cheese. Bake in 350 degrees F oven until bubbly about 25-30 minutes. Garnish with pimento strips.

Hi: Just read your recipe and though it sounds good, I have a tuna casserole recipe that is richer by far (i.e. likely more calories!) but much, much tastier. I don't make a white sauce, just use evaporated milk mixed with cheddar cheese soup, PLUS extra grated Cheddar. I add W. sauce, garlic, Dijon and lots of pepper.
I cook in a homeless shelter and the women LOVE this mixture, even those who don't normally like pasta, eat it and rave about it.
