Gold Post Medal for All Time! 555 Posts I am always looking for uses for over ripe bananas and couldn't believe how great this one is! Instead of making carb/calorie heavy banana bread turn your overripe bananas into pancakes!
Prep Time: 1 minute
Cook Time: 5 minutes
Yield: 4- 7" pancakes
Ingredients:
- 1 ripe banana
- 2 eggs
- spritz spray for pan
Steps:
- Put 2 eggs and one peeled banana into a blender, magic bullet or just mash bananas and hand mix until smooth.
- Heat a pan between low and medium. Add a spritz of oil (I used a 7" pan so I had to make 4 individual pancakes, one at a time). I'd suggest a larger pan and then you can make all pancakes at once, just smaller. If you'd like to turn these into wraps or even crepes you may use a larger pan.
- Pour the batter into the pan; just a thin coat will do.
- Let it cook just like a pancake and flip it when it looks like its drying out a bit on the top. Low heat is great for these thin pancakes! It doesn't totally dry on top nor does it bubble around edges like flour pancakes do, so keep your eye on them. Mine took about 2 1/2 minutes on first side, but I used low heat. I didn't want it to burn.
- I sprinkled cinnamin to one batch while it cooked just to experiment. Flip them and continue cooking.
- Transfer to dish and either top with your favorite pancake topping or just eat them as is! I found them sweet enough to eat without adding anything on them, but I can see me adding cheese and/or veggies and wrapping them up like a tortilla for a more savory breakfast. They are very crepe like... thinner and more delicate, but a big hit at my house!
