If you have extra toaster/oven racks, you can make yourself a drying rack. The oven rack is elevated and underneath you can put a towel to absorb the water.
Or, if you have a broken toaster oven, you can still salvage the racks.

Use the extra oven rack for a cooling rack for cakes, cookies, etc. For smaller items like cookies, cover the rack with foil to keep them from falling through.
I don't remember where I saw this tip but it sure did come in handy this holiday with all the cooking that I did. I placed a small oven rack on top of the Pyrex dish in the refrigerator so I could stack something on top of it.
