Description:
Arrowroot (Maranta arundinacea) is a large perennial herb found in rainforest habitats normally in the West Indies. It is used as a thickening agent for gravies and sauces and will give a nice gloss when added to food. It is considered easier on the stomach than other thickening agents.
Uses:
Put a tablespoon of arrowroot powder in cool water and then mix into your sauce or gravy. Overheating will break down it's thickening power.
Storage:
Ground arrowroot should be stored for 6 months in airtight containers away from light.
Substitutions:
Kudzu powder, corn starch, instant tapioca (will need to be grinded in a coffee grinder if the tapioca bubbles are a problem).
