I will often have knots brought to me to untie that are practically impossible to undo. I recreated, in pictures, how I get these knots out. I thread a needle with embroidery floss and get the string of embroidery floss between the knotted yarns. I will keep reinserting the needle and yarn wherever the knot is the most stuck. After a bit of pulling, everything is able to be untied :)

Could you use a similar method to untie knots in necklaces?
I don't have necklaces, but I think you could. I was using this method 60 years ago to get knots out of my shoe laces.

For necklaces, put knotted chain on a plate and one drop of cooking oil. Use 2 pins to tease the knot apart. Oil makes it really easy.
