I have an encyclopedia entitled Chambers's Encyclopaedia of Universal Knowledge volume 5. It looks to be from the late 1800s. Does this book have any value?

This is not a complete set. Most of these books, even if they are old, don't have value unless they are rare first editions. You could take it to a bookseller to make sure.
These books do go up for sale on eBay but are slow sellers.
Here are a couple of eBay sites with Chamber's Encyclopaedia books for sale. Just remember - being up for sale (at any price) does not mean the book(s) will ever sell.

Unfortunately, unless you can find someone who collects archaic information, the books no longer have value (from an academic perspective). The contents are outdated.
