We found some volumes of the Encyclopedia Britannica, 1768, third edition, printed A. Bell. The only problem is there is not a complete set. How much would these books be worth?

If it is over 100 years old, it should have value,even if incomplete. Take it to a couple of book dealers and see what they say.
I'm not sure that you are looking at the correct dates of publication as I cannot find any reference to a set published in 1768.
Thank you for posting that page as it clearly shows (in Roman numerals) 1768 and 3rd edition.
Just to give you an idea of how much old books from this era are worth, this ebay search suggests that a solitary book that's that old can go from $26 to $60 www.ebay.com/
since it's not a full set, you'd be looking at selling them as individuals
