I have a set of Encyclopedia Britannica dated 1768. The copyright is 1951. How much is it worth?

They are not worth much since they are not antiques. People get information from the internet nowadays
Are you sure this is correct? it seems a bit strange that you have said the books are from 1768 but they were coprighted in 1951. Are you sure the books are not from 1968. This would seem a bit more reasonable to me.
I think the 1768 is part of the title, probably commemmorating the year the first encyclopedia was published. There are many different volumes printed in the 20th century that all start with 1768.
So it is probably not worth very much. You might be able to find someone who wishes to use them for crafting but it would need to be in your local area as shipping heavy books is expensive.
If you are unsure about the publish date, take it to a used bookstore or antique shop that specializes in books and they can give you an estimate of the value.
