I am finding beans full me up better than meat, poultry and fish. It is healthy and cost-effective.
Supplies:
- 1 15 oz. can chickpeas, rinsed and drained
- 3 Tbsp tahini
- 1 tsp Dijon or spicy brown mustard
- 1 Tbsp maple syrup or agave nectar
- 1/4 cup diced red onion*
- 1/4 cup diced celery
- 1/4 cup diced pickle
- 1 tsp capers, drained and loosely chopped*
- Healthy pinch each sea salt and black pepper
- 1 Tbsp roasted unsalted sunflower seeds (optional)
*Note: I did not have capers, and do not like raw onions, so I left them out.
Steps:
- Mash the chickpeas with a fork.
- Add the rest of the ingredients and mix well.
- Serve on bread or on top of lettuce.
