In large skillet, cook beef until no longer pink, then drain. Stir in mixed vegetables, diced tomatoes, broth, and pepper. Bring to a boil. Add macaroni. Reduce the heat. Simmer for 8-10 minutes until macaroni and vegetables are tender.

A good pot of hearty beef-vegetable soup makes a great lunch or dinner. Just add a sandwich or salad, small dessert and a beverage and some restaurants charge $9.99 for a meal that you can have at home for less than $3.00.
In the days to come, we're all going to be cutting back a little if not a lot and starting today will give you a little extra money to save for the rainy days that are ahead.
A variety of soups in the freezer are like money in the bank, and are good
for us too. Don't forget you can make your own salad dressings too. They'll be a lot healthier in addition to about 1/5 the cost of the store-bought dressings which are often loaded with preservatives.
If you can plan to have soup in your menu planning just twice a week, you'll
save enough money to splurge a little on the weekends.
