I had some odds and ends of vegetables to use up, so I improvised a recipe I found online to make these vegetable fritters with a sour cream topping.
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Yield: 8 patties
Ingredients:
- 1 1/2 cup shredded zucchini
- 1 1/2 cup shredded carrot
- 1/4 cup chopped onion
- 1 1/4 cup riced or chopped cauliflower
- 2 eggs
- 3/4 cup flour
- salt and pepper
- olive oil
- Sauce:
- 1/2 cup sour cream
- 1/2 tsp garlic salt
- 1/4 tsp dill seed
- 1/4 tsp curry pow
Steps:
- Shred or chop vegetables and place in a bowl.
- Add flour and eggs and season with salt and pepper. Stir until mixed thoroughly.
- Drop by spoonfuls to form patties and fry in olive oil until browned on both sides. Serve with sour cream topping.
