Vegetables Fritters

A plate with four vegetable fritters.I had some odds and ends of vegetables to use up, so I improvised a recipe I found online to make these vegetable fritters with a sour cream topping.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 8 patties

Ingredients:

  • 1 1/2 cup shredded zucchini
  • 1 1/2 cup shredded carrot
  • 1/4 cup chopped onion
  • 1 1/4 cup riced or chopped cauliflower
  • 2 eggs
  • 3/4 cup flour
  • salt and pepper
  • olive oil
  • Sauce:
  • 1/2 cup sour cream
  • 1/2 tsp garlic salt
  • 1/4 tsp dill seed
  • 1/4 tsp curry pow

Steps:

  1. Shred or chop vegetables and place in a bowl.
  2. Mixing finely diced vegetables together.
     
  3. Add flour and eggs and season with salt and pepper. Stir until mixed thoroughly.
  4. Adding flour to the vegetable mixture.
     
  5. Drop by spoonfuls to form patties and fry in olive oil until browned on both sides. Serve with sour cream topping.
