Diamond Post Medal for All Time! 1,246 Posts This is one of my favourite versions of a tuna melt because it has added veggies and Greek yogurt. Choose any type of cheese you like, I went with a slice of Muenster!
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Yield: 1 sandwich
Ingredients:
- 3 ounces canned tuna
- 1 Tbsp onion, thinly sliced
- 1 Tbsp lettuce, thinly sliced
- 1/2 Tbsp parsley leaves, chopped
- juice of 1/4 of a lemon
- salt and pepper
- 1 Tbsp Greek yogurt
- 1 tsp mayonnaise
- 1 tsp mustard
- 2 slices bread
- butter
- 1/4 avocado
- 1/4 small tomato
- 1 slice cheese
Steps:
- In a bowl, mix together the tuna, onions, lettuce, and parsley. Squeeze lemon juice on top, sprinkle with a bit of salt and pepper. Mix well.
- Add yogurt, mayonnaise, and mustard. Stir well.
- Allow mixture to sit for a few minutes for flavours to come out. Tip out any juices from the bowl.
- Butter the slices of bread on one side each.
- Place one slice, butter side down, on a lightly greased nonstick pan over medium heat.
- Spoon the tuna mixture onto the bread.
- Place avocado and tomato slices on top.
- Add the slice of cheese, then top with the other slice of bread, buttered side up.
- When the bottom slice is golden brown (a total of a couple minutes), flip over and cook until the other slice is browned.
- Serve with lettuce and/or pickles.
